Opening chefs depart from Fiola and Ba Bay

Tom Sietsema had an active morning with his weekly chat today. First, the Washington Post restaurant critic broke the news that chef Nick Sharpe had left Capitol Hill Vietnamese restaurant Ba Bay. Owner Khoa Nguyen is stepping into the kitchen to fill the void, enlisting help from sous chef Sara Siegel and Hoa Tran, his 83-year-old grandmother. Find out more details, including major menu overhauls, in the chat.

Later in the same chat, Sietsema casually let drop that Fiola, Fabio Trabocchi’s swanky new modern Italian spot, has already lost its opening chef, Miles Vaden. Details were scarce, but it’s a safe bet we will be hearing more on this one soon.
