Thunder Burger & Bar
in Georgetown, which launches a Wild Wednesdays promotion beginning at 4 p.m. Anyone curious about alligator -- the bistro’s inaugural wild meat special -- might want to check out chef Ryan Fichter’s alligator ribs ($14), which he’s saucing with a chipotle honey and serving with cranberry-dill coleslaw. (Because alligator is relatively tough, Fichter is braising his catch in beer to tenderize it.)
On July 6, the special will be ostrich, and Fichter, a veteran of two area Clyde’s restaurants, plans to serve it in the form of a burger. In future weeks, he hopes to feature antelope, bear, lion and perhaps camel, all of which he says he can purchase from a wild game source in Northern California.
There are limits to what the chef might sell, he suggests; Thunder Burger’s owners, “afraid of PETA,” aren’t keen on zebra, for instance.
Why wild and why Wednesday? Fichter says he wants to offer something “a lot of people have never tried.” The middle of the week provides him with “catchy” alliteration.
