Inside Barmini, Jose Andres’s cocktail lab next to Minibar

February 5, 2013

This post has been updated.

After tweeting for days with the hashtag #josehasasecret, Jose Andres stopped being coy with us and unveiled his newest restaurant concept: Barmini, the adjoining sister to Minibar at 855 E St. NW. It's a sleek cocktail bar with a menu of more than 100 drinks, from new creations to takes on classic cocktails. The bar opens Feb. 15 and is reservations-only. Book your spot from 11 a.m. to 2 p.m. daily by calling 202-393-4451 or by e-mailing barmini@minibarbyjoseandres.com. Update from Barmini, Feb. 6: "Starting February 15th, Barmini will be taking reservation through our website – www.minibarbyjoseandres.com – under reservations."

So what can you see, eat and drink at Barmini?

1. "It's up to you," said Juan Coronado, Barmini's cocktail innovator. "A cocktail is so personal. I can get you inspired to try something, but in the end, you are the guest." That said, a few highlights: the Jersey Lightning with applejack, peach brandy, egg, lime, sugar and a squirt of seltzer; and the Big in Japan, featuring a mescal marshmallow, along with Japanese whiskey, and bitter French aperitifs Salers and Suze. Coronado's favorite is the "Veruka Salt," which he says was inspired by a bag of peanuts that he opened on a long flight. Peanut-infused spirits and pineapple grog are among the ingredients.

2. Ice cubes being cut the old-fashioned way, with a handsaw.

3. This couch, shaped like so many spiny cacti (One of Jose's team members told me it costs more than a car). It was designed by Cerruti Baleri, and is accompanied by fruit-shaped ottomans. Looks like a beanbag chair, but it's actually firm. Sit on it, if only to say that you sat in a chair that costs more than a car.

4. You won't have to save up for too long to eat and drink at Barmini. Cocktails will range from $14 to $20, and bar snacks -- like charcuterie, caviar and finger sandwiches -- will range from $5 to $16. However, Andres said that a window between Barmini and Minibar will always be there, so you can stare at other people's more expensive dinners.

5. This wall of hands:

6. This crazy machine. It's a rotary vacuum, and it distills spirits and infuses them with any essence that the mixologists add to it.

7. Andres, introducing the restaurant, said "You can eat to live, but you can drink to survive." Cheers to that. More photos and a full cocktail menu below.
