In our hunt for Washington's 40 essential eats, we tapped a few higher-profile foodies to name their favorite dishes: From the Columbia Room's Derek Brown, we learned of the duck soup at the hidden-in-plain-sight Chinatown Express, where noodles are still stretched by hand daily; Travis Croxton of Union Market's Rappahannock Oyster Bar is a regular at Toki Underground, where he and his staff slurp down the pork-laced kimchi ramen.
Unbeknownst to us, the pair weren't simply friends, but business partners who were quietly cooking up a 67-seat oyster and cocktail den on Seventh Street NW that will be known as Eat the Rich.
