Toki Underground chef Erik Bruner-Yang's preview of his upcoming Asian street-food concept, Maketto, officially kicks off Monday at 14th Street's Hanoi House, and many reservations for the first few weeks of the three-month experiment have already been snapped up. But spots are still available, so long as you're nimble. Here's what you need to know.
How do I get a reservation? You make a reservation through Hanoi House on Open Table, which shows that reservations are available. There are a few seatings each night.
How will it work? The residency will serve as a test kitchen for Bruner-Yang and chef de cuisine James Wozniuk. Dinner will be served family-style, for $30 per person, and the menu will change frequently.
I'm gluten-free/vegetarian/picky. Maketto has noted that there will be no accommodations for allergies or dietary restrictions for the residency. A dim-sum cart will be available.
