The chemistry of candy corn

Just in time for Halloween, the fun-loving folks at the American Chemical Society have served up a couple of videos explaining the science behind candy corn and hard candy.

They’re not particularly high in production values, but the short clips remind us, at a time when we worry so much about chemicals contaminating our food, that there’s chemistry behind most of what we eat. In this instance, the different ways that sugar crystallizes determine whether the candy’s glassy hard like a lemon drop or soft like candy corn.

The videos are part of the organization’s Bytesize Science series aimed at helping regular people connect with and better understand chemistry. You can watch the videos on bytesizescience.com or on YouTube.

And not to worry: The videos don’t take any of the mystery or fun out of Halloween. In fact, they may make you appreciate candy corn all the more.
