Video: Traditional udon noodle-making in Japan

November 14, 2012

Tetsuo Shimizu is so passionate about the udon he sells at his restaurant that he grows his own wheat and makes the noodles by hand according to an old family recipe. The Perennial Plate, an American video series chronicling "adventures in sustainable eating," put his story (and his noodles) into this video.

It's part of the Perennial Plate's series about Japan, which TheAtlantic.com's Kasia Cieplak-Mayr Von Baldegg is curating here.

If you've made it through the video and are looking for more delicious food from around the world, check out our world food coverage here.
