The Peruvian Festival of Arlington, held annually in honor of Peru's independence day (July 28), celebrates the South American country's 188 years of independence from Spain with a traditional lineup of Peruvian dances, music and cuisine. Hear singers perform msica criolla (Creole) and Afro-Peruvian songs, while huayno musicians and dancers perform that genre, which has its origins in the Andean highlands. On the menu are more than 15 Peruvian dishes, from standard fare such as Peruvian chicken a la brasa and seafood ceviche to more exotic dishes such as anticuchos (marinated, grilled skewers of beef heart) and rocoto relleno (Peruvian peppers stuffed with cheese and meat). The truly adventurous culinary explorer can try cau cau or chanfainita, two dishes made from stewed beef stomach.
