Pan-seared squash pot stickers are a small starter done well. Chef Aulie Bunyarataphan has upgraded the vegetarian appetizer on all counts: The wrapper dough, rolled thinner than usual, is commendably tender. The filling is a mixture of differently textured, yet light, sweet potato and butternut squash that is boiled and stir-fried; egg helps bind the vegetables with bits of red onion and scallion.
