Want to dine at America’s best new restaurant? Don’t go this Wednesday.

How does the chef and owner of America's best new restaurant celebrate?

If you're Aaron Silverman, the man behind Rose's Luxury, you close down the very restaurant that Bon Appetit placed at the top of its list on Tuesday. Silverman says Rose's will go dark on Wednesday so the staff "can all get together and have a great moment together." The chef relayed the news about the bonus day-off during a pre-shift staff meeting this afternoon.

And what will the staff do tomorrow aside from, you know, party?

"I have no idea," Silverman says. General manager Andrew Limberg is tasked with arranging an event for the 50-plus staff, which he will apparently have time to do since Rose's plans to shut down its patio this evening.

Whatever gets planned, Silverman says everyone who works at Rose's is invited, plus their spouses, significant others, best friends, whoever. "There's just been a ton of blood, sweat and tears put into this place," Silverman says, and that includes the loved ones who have to deal with the long, strange hours of a hyper-busy restaurant staff.

"I owe them a huge thank you," Silverman says.

The Rose's line cook featured on the cover of the September issue of Bon Appetit (photo above) won't be there, however. Anna Marie Vocaturo left Rose's Luxury a couple weeks ago to start a new life in Portland, Ore., Silverman says.

Tim Carman serves as the full-time writer for the Post's Food section and as the $20 Diner for the Weekend section, a double duty that requires he ingest more calories than a draft horse.
