Steamed Sesame Baby Spinach, Carrots and Red Peppers 6.000
May 3, 2006

David Hagedorn created this refreshing side dish by starting with store-bought products and boosting their flavor. He used Fresh Express Baby Spinach, which comes with or without carrots.

Servings: 6
Ingredients
  • 3 bags (27 ounces) Fresh Express spinach
  • 1 red bell pepper, stemmed, seeded and cut in juilienne strips
  • 1 tablespoon toasted sesame oil
  • 1 teaspoon chopped ginger root
  • 1 teaspoon minced garlic
  • Salt
  • Freshly ground black pepper
  • Sesame seeds, for garnish
  • Fresh carrots

Directions

Place the spinach and carrots, bell pepper, sesame oil, ginger, garlic and salt and pepper to taste in a jumbo (2.5-gallon) plastic food storage bag and partially seal the bag, leaving 2 inches open along the closure. Or place all the ingredients in a large, microwave-safe bowl (you will have to stuff the spinach in) and cover the bowl with microwave-safe plastic wrap. Microwave on high for 2 1/2 minutes. Open the bag or uncover the bowl (be careful of the steam) and turn the contents with tongs. The spinach should be just wilted. If necessary, return to the microwave for 30 more seconds. To leave behind any water that may have accumulated during steaming, use tongs to place the spinach in a serving bowl. Sprinkle sesame seeds over the spinach and serve hot or warm.
