This is a Scandinavian version of the classic French 75, calling for aquavit and lime instead of gin and lemon. Spirits columnist Jason Wilson recommends using a Norwegian-style aged aquavit, such as Linie. For the sparkling wine, Spanish cava works well.
- 1 1/2 ounces aquavit
- 1/2 ounce freshly squeezed lime juice
- 1 teaspoon simple syrup (see NOTE)
- 3 ounces sparkling wine
- Lime peel twist, for garnish
Fill a cocktail shaker halfway with ice. Add the aquavit, lime juice and simple syrup. Shake well, then strain into a champagne flute.
Top with the sparkling wine. Garnish with the twist of lime peel.
NOTE: To make simple syrup, combine 1/2 cup of sugar and 1/2 cup of water in a small saucepan over medium heat, stirring until the sugar dissolves. Bring to a slow rolling boil, then reduce the heat to medium-low and cook for 5 minutes. Transfer to a heatproof container and let cool to room temperature. Cool completely before using or storing in a glass jar in the refrigerator, where it will keep for up to 4 weeks.
