The People’s Burger: Bacon jam from Mad Fox Brewing Company’s Bacon Jam Burger

When chef Andrew Dixon took over the Mad Fox kitchen in Falls Church midway through last year, he tweaked the recipe for the restaurant’s popular bacon spread and gave it a permanent home on the menu with the Bacon Jam Burger ($11 at lunch, $14 at dinner). Dixon renders Nueske’s applewood smoked bacon to get it crisp before mixing it with coffee, a porter or stout, garlic, onion, honey and brown sugar to create a smoky, subtly sweet topping that stands up to the slather of Rogue Creamery’s blue cheese and the earthiness of the six-ounce chuck and brisket patty.
