Scalloped Crab and Lobster
8 to 10 servings
This impressive first-course requires several pots and pans and a considerable amount of expense, but the result is worth it.
8 tablespoons (4 ounces) unsalted butter, plus additional for the ramekins
1/4 cup finely chopped shallots (from 2 medium)
1 1/2 pounds jumbo lump crab meat
4 ounces Madeira
4 cups Cream Sauce (recipe follows)
1/2 ounce (3 tablespoons) dry mustard
2 ounces finely chopped fresh dill
1 cup heavy cream
2 ounces ( 1/4 cup) Worcestershire sauce
4 cups button mushrooms, thinly sliced
Poached Lobster (recipe follows) or four 1 1/2-pound lobsters, steamed
1 cup (about 4 ounces) grated Parmesan cheese
