HOW TO BUY AND STORE: Available year-round, the best rutabagas or swedes are firm, blemish-free with no cracks or deep pits and heavy for their size. They can be stored in the vegetable crisper drawer of the refrigerator for a month or more. Waxed specimens must be peeled before cooking.
