Creamed Green Beans with Mustard Sauce and Toasted Almonds
Serves 8 to 10
Adapted from "Perfect Recipes for Having People Over," by Pam Anderson (Houghton Mifflin, 2005).
1/2 cup slivered almonds, toasted
4 tablespoons ( 1/2 stick) butter
1 package (16 ounces) frozen pearl onions
2 pounds green beans, trimmed and snapped into 2-inch pieces
Salt
1 1/2 cups whole milk
1/2 cup chicken broth
1/4 cup Dijon-style mustard
3 tablespoons flour
