Doron Petersan of Sticky Fingers vegan bakery says customers often comment that her bakery's vegan chocolate cake tastes just like a cake their grandmothers made. That's probably because World War II food rationing meant that cakes were often vegan by necessity. Recipes for War Cake, also called Wacky Cake or Depression Cake, abound on the Web.
Cake Ingredients
1 1/2 cups flour
1/3 cup cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup sugar
1/2 cup vegetable oil
1 cup cold water or cold brewed coffee
2 teaspoons vanilla extract
2 tablespoons apple cider vinegar
Preheat the oven to 375 degrees.
