The vegetarians and meat eaters were united in one respect -- no one could say "nut loaf" with a straight face. There's just something about a mound of baked nuts that invites giggles. Nut loaf is a bit of throwback, the vegan equivalent of a tuna casserole or mac and cheese. I included it as a test of vegan-style comfort food. Alas, not all the guests were comfortable with it; Eric Sokol took one bite and then tried to hide the rest in his napkin. Vikki Valentine, meanwhile, took home leftovers and enjoyed a nut-loaf breakfast the next morning.

Ingredients

4 tablespoons vegan margarine

2 large onions, finely chopped

1 teaspoon dried thyme

1 tablespoon flour

1/2 cup water

1 cup finely ground cashews

1 cup finely ground Brazil nuts or hazelnuts

1 1/3 cups dried bread crumbs, plus 2 tablespoons for coating

1 tablespoon lemon juice

Salt
