Gingered Pork and Mango Summer Rolls
Makes 16 medium rolls
Pork is a particularly complemented by summer fruits. This summer roll uses mango two ways: in the roll and as the base for a tangy dipping sauce.
For the dipping sauce:
3/4 cup diced mango
2 tablespoons mirin* (Japanese sweet cooking wine)
1 tablespoon Dijon-style mustard
1-inch piece ginger root, finely grated
2 tablespoons water, or as needed
2 teaspoons sugar
