Grady's Eggs

Although Lou Elliott Jones considers herself a Southerner, it was at the Atlantic Grille in Middletown, R.I., that she got her first taste of an eggs Benedict that used corn muffins as the base. Her husband, Grady, now regularly asks for corn muffins in his Benedicts.
6 slices very thinly sliced, good-quality prosciutto
1 to 2 tablespoons olive oil
1 clove garlic, thinly sliced
1 pound spinach, tough stems removed (may substitute 10-ounce package frozen spinach, thawed with excess moisture squeezed out)
3/4 cup heavy cream
Salt
Freshly ground black pepper
4 large homemade or store-bought jalapeno corn muffins
2 teaspoons white distilled vinegar
