Date Pinwheels
Makes 72 cookies
This is an easy slice-and-bake cookie with a nice chewy-to-crisp ratio. The dough can be frozen in logs, well wrapped, for up to 1 month. Adapted from food writer and stylist Lisa Cherkasky.
2 cups flour
1/8 teaspoon salt
1/4 teaspoon baking soda
1/2 cup unsalted butter
3/4 cup sugar
1/2 cup packed light brown sugar
1/2 teaspoon vanilla extract
1 large egg, lightly beaten
One 7 1/4 ounce package pitted dates, minced
