Cardamom Cane-Sugar Cutouts
Makes 36 to 48 cookies
These not-too-sweet cookies are easy to cut out because the dough is firm. The dough can be wrapped and chilled overnight; for best results, bring to room temperature for about 5 minutes before using.
Iced, the cookies can be stored in an airtight container for up to 1 week; the plain cookies can be made ahead and frozen, well wrapped, for up to 2 months. Adapted from recipes developed on behalf of the American Butter Institute.
For the cookies:
4 cups flour
1/2 teaspoon salt
3 to 4 tablespoons ground cardamom
12 ounces (3 sticks) unsalted butter, at room temperature
1 cup natural (raw) cane sugar
2 large egg yolks
1 tablespoon lemon or orange zest (about 1 large lemon or small orange), freshly grated
