Uovi Brasato

Executive sous chef Sean Thomas of Google's Cafe 150 says his grandmother used to serve this vegetarian dish during a meatless Lent. It is often served at the cafe. Bits of egg white enrich the wine-dark sauce as it cooks for hours.

Thomas allows 2 eggs per person, but if you cut that in half, the eggs still will poach evenly. The recipe makes enough sauce for leftovers. If you want to use fresh tomatoes, start with about 5 pounds, then peel, seed and dice, reserving their liquid.

2 tablespoons olive oil

1 medium yellow onion, cut into 1/4 -inch dice

Salt

Freshly ground black pepper

6 medium cloves garlic, smashed and finely chopped

Leaves from 8 sprigs oregano, coarsely chopped

Leaves from 1 bunch basil, cut into julienne (very thin strips; about 3/4 cup)

8 ounces tomato paste
