At Bastille, a charming bistro on the edge of Old Town Alexandria, the Calamari Beignets ($7) start the meal on a tender note. Husband-and-wife chefs Christophe Poteaux and Michelle Garbee call their fare Franco-Mediterranean, but these are good old American fritters. The small, delicate fluffs are chock-full of sliced calamari and rock shrimp, lightly held together by a lemony, parsley-speckled batter.
The ample portion is served in a parchment-lined iron cornet and comes with a house-made harissa dipping sauce. A single order is perfect for sharing, with a slight hitch: Seven beignets for two people might test the generosity between friends.
