Sweet and Sour Tomatoes
6 to 8 side-dish servings
This should be served the same day it is made. Adapted from "Simple Chinese Cooking" by Kylie Kwong (Viking Studio, 2007).
1 medium red onion, very thinly sliced
1 tablespoon sugar
2 teaspoons sea salt
4 small vine-ripened tomatoes
1/4 cup malt vinegar
2 tablespoons fish sauce
Combine the onion, sugar and salt in a medium bowl; let stand for 30 minutes.
When the onion has cured, core the tomatoes and cut into wedges. Add the tomatoes, vinegar and fish sauce to the onion mixture and toss to combine. Serve warm or at room temperature.
