What began long ago in Mumbai as street food, typically served on puri (deep-fried flatbread), has morphed into a small plate ($4.95) on Heritage India's menu. This version arrives in a papadum shell; cradled inside is a jumble of crunchy puffed rice, chickpea flour vermicelli, diced potatoes, shallots, tomatoes, onion and cilantro. The mixture is well spiced with green chili peppers and laced with sweet-and-sour chutneys of tamarind and dates.
