Rangoli Restaurant, 24995 Riding Plaza, South Riding, 703-957-4900;http://www.rangolirestaurant.us Though this entree might seem out of place on a traditional Indian menu, it showcases the collaborative aspects of Indochinese cooking here. For the fiery offering ($13.95), served with basmati rice, boneless chunks of white-meat chicken are marinated in cornstarch and soy sauce, then stir-fried in a wok. The chicken is cooked with ginger, garlic, scallions and large slivers of Thai chili pepper to create the heat and spiciness common to Indian cuisine.
