Carminantonio Iannaccone's Way With Tiramisu
1. Carminantonio Iannaccone showed us how he assembles his tiramisu at Piedigrotta. First, he combines mascarpone cheese and whipped cream.
2. Then he folds in chilled pastry cream and zabaglione.
3. He quickly dips ladyfingers in sweetened espresso and lines them up on a serving platter.
4. Onto the first layer, he pipes the cream mixture in wide strips.
5. Then he lays on another set of ladyfingers.
6. After a final layer of cream, he showers cocoa powder on top.
