Because of drought and limited production in the United States, most of the grass-fed beef sold in Washington grocery stores comes from Australia and South America. However, you can buy U.S. grass-fed beef at local farms and online. Many smaller producers sell only larger quantities -- a quarter- or half-cow -- but bigger operations sell individual cuts.
Hedgeapple Farm (3760 Buckeystown Pike, Buckeystown, 301-662-0226, http://www.hedgeapplefarm.com) sells grass-fed steaks ($8.95 per pound for sirloin, $21.95 per pound for tenderloin filet), hamburger meat ($3.95 per pound) and ready-made meals such as beef chili at its farm store. The store is open Thursday and Friday from noon to 5 p.m., Saturday from 9 a.m. to 3 p.m.
Tallgrass Beef ( http://www.tallgrassbeef.com) in Kansas sells individual cuts and combination packs of steaks, ground beef and sausages. A 12-ounce sirloin sells for $12.99; an 8-ounce filet mignon, $24.99.
Burgundy Pasture Beef ( http://www.burgundypasturebeef.com) in Texas sells steaks, braising cuts and ground beef, plus pork, lamb and chicken. Top sirloin sells for $7.29 per pound; tenderloin filet, $27.99 per pound.
