-DeVries Chocolates are a revelation. Denver chocolatier Steve DeVries handcrafts his line of bars, nibs and nib clusters with deep, complex flavors. He buys organic cacao beans direct from growers in Costa Rica and the Dominican Republic, slow-roasts them and uses just the beans and pure cane sugar in his small-batch factory, working with vintage chocolate-makingmachinery.
Two lines of DeVries chocolate bars, Costa Rican Trinitario and La Dominicana ($7.35 for 1.15 ounces), are available in 77 percent, 80 percent and 84 percent strengths.
