Sweet Potato-Apple Puree

Peel and dice (or finely chop) 2 large sweet potatoes . Place in the pot with a cleaned, chopped leek or 1 medium onion , quartered, plus a peeled and seeded apple , quartered, and a cinnamon stick . Add enough liquid (water or chicken or vegetable broth) to barely cover the ingredients. Bring to a boil, then reduce the heat and cook, with the mixture barely bubbling, until the sweet potatoes are fork-tender. Use a blender or immersion blender to puree until smooth. Season to taste with salt and black pepper . Add 1 chipotle chili en adobo ,1/2 teaspoon cayenne pepper or a few glugs of hot pepper sauce .
GARNISH: with toasted walnuts or pecans , or a drizzle of honey and a lime wedge. This soup goes great with beer and a hunk of crusty bread for dipping. .
