- To make sure you are buying fresh flour, check the sell-by date stamped on the bag. Ideally, it should be several months in the future.

- Do not buy whole-wheat flour or whole-grain products from the large plastic bins found in some markets. The product will have been stored loose at room temperature and possibly for a long time.

- A spoiled grain will have a rancid smell and should be discarded.

- Storing grains in the freezer (in airtight containers or in heavy-duty resealable plastic food storage bags) prevents bug problems.
