Worlds away from their juicy, brine-cured counterparts, country hams are dry-cured and aged, sometimes for a year or more. They should have a silky texture and deep, concentrated flavor. Country ham is available at Dean & DeLuca, at some large supermarkets and from online purveyors. At the Inn at Little Washington, chef-owner Patrick O'Connell serves ham from Calhoun's Country Hams. They are available at the company's store in Culpeper (877-825-8319) or at the farmers market in Old Town Alexandria on Saturdays.
