Always break eggs one at a time into a small container, such as a teacup. That way, if a piece of shell falls in, you can remove it fairly easily. Similarly, separate eggs one by one using a small cup. If one yolk breaks, or if the egg is spoiled, it can be discarded without ruining an entire souffle's worth.
