Year of the Potato

The humble potato is making its mark in the developing world. Since the early 1990s, production in emerging economies has almost doubled to about 182 million tons, surpassing the harvest in developed nations. Rising income is driving demand, especially in urban areas. The United Nations has designated 2008 the International Year of the Potato.
