As for equipment, Shorter recommends shopping online at Amazon.com or Ball's Web site ( http://www.freshpreserving.com) or at hardware stores such as Strosnider's in Bethesda, Potomac and Silver Spring ( http://www.strosniders.com).

Then there's the produce itself. Chef Brian McBride of Blue Duck Tavern says to keep it simple: "White peaches with basil, rosemary with tomatoes, or hot peppers, banana peppers or jalapeƱo with tomatoes: whatever is at the farmers market at the same time."
