A growing number of local restaurants serve the new veal, including Restaurant Eve, Marcel's, Palena, Proof and Tosca. It is also available retail at the following markets:

Allen Brothers sells Strauss veal by mail order under its Meadow Reserve label. Scaloppini is $149.95 per three pounds; two 20 to 24-ounce veal shanks, $99.95. www.allenbrothers.com
