-- Favorite cookbooks: "The Food of Italy," by Claudia Roden (Vintage, 1998); "Marcella Cucina," by Marcella Hazan (Morrow, 1997); "Zuppa," by Ann Bianchi (Ecco, 1996).

-- Favorite tip she has learned (from chef Rowley Leigh): "Scatter big salt crystals on the bottom of a roasting pan or baking dish before the vegetables go in. It keeps them from sticking."

-- Thing she would change about her kitchen: "The countertops, which are limestone. It's slightly delicate; when you're a cook, you want to be able to bang around."
