Beef's Wake-Up Recall

Meatpacking plants must take measures to reduce the possibility of E. coli contamination during the slaughter process. The bacteria may live in the guts of cattle or in fecal matter on their hides. Below is an example of a typical meat production process including some of the methods that might be used to guard against contamination.
