What's Cooking this fall Cooking Classes Takeout Gourmet takeout At 1789, doyenne of Georgetown elegance, there's a choice between an a la carte menu and a set three-course meal. On the former is chef Ris Lacoste's famous rack of American lamb ($36), turkey plus trimmings ($26), Icelandic salmon ($25) or filet of beef ($30). The fixed-price latter, at $34, seems like good bang for the buck. Dinner is served from noon to 9, with complimentary valet parking. 1789 is now fully booked, but in case of cancellation, call 202/965-1789.

15 ria will offer a tidy three-courser for $34 -- a Thanksgiving Meat and Two. In other words, choose your meat (roast suckling pig, whole roasted fish, a cider-glazed turkey with cranberry sauce or molasses-braised short ribs) and then two sides. Dinner is served from 1 to 8. Call 202/742-0015.

Ardeo in Cleveland Park is kind on the purse with its three-course traditional menu for $26.95. Regular menu items will also be available. Dinner is served from 2 to 8. Call 202/244-6750.

Bistro Bis is still crafting its menu for the day, but promises a traditional a la carte dinner in addition to a slimmed-down version of its regular menu, served from noon to 8. Call 202/661-2700.

Open from noon to 8 on Thanksgiving, Bombay Club offers its regular a la carte menu, which includes turkey cooked in the tandoor (clay oven). Count on cranberry sauce as well. Complimentary valet will be provided. Call 202/659-3727.

Cheff Geoff's on both New Mexico Avenue and Pennsylvania Avenue will serve a Thanksgiving tasting menu from noon until 8 for $39 per person. Call 202/237-7800 or 202/464-4461.

We think Michel Richard is offering a good deal this year. A fantastic buffet brunch at Citronelle costs $70 a head ($32 for children). The feast is from 2 to 7:30. Valet parking is $5. Call 202/625-2150.

At the Morrison House's Elysium in Old Town, there's a waiting list for the sit-down dinner from 6 to 9, but plenty of space still for the noon to 4 buffet. Imagine sage-rubbed turkey with rosemary gravy, prime rib, Alaskan salmon and a smoked seafood "display." The price, exclusive of wine, tax and tip, is $59 ($30 for children under 7). At Georgia Brown's, it works like this: Pick your meat from a choice of three (the traditional roasted bird, GB's famous deep-fried turkey or pork loin), then help yourself from the buffet of Southern sides -- candied yams, collards, potato salad and so on. For vegetarians? Black-eyed pea cakes and a winter vegetable sampler. The tab is $34 for adults; $17.95 for children under 12. Call 202/393-4499.

At noon, 3 and 6, the Ritz Carlton's Grill Restaurant rolls out a phenomenal repast, replete with burgeoning appetizer buffet, a rich choice of entrees (turkey, striped bass, beef filet and a vegetarian dish of roasted vegetables are on the list), as well as a "cornucopia" of desserts. The $78 tab ($40 for ages 6 to 12) does not include alcoholic beverages or taxes. Call 202/835-0500, Ext. 2837.

Snail potpie, young turkey with chestnut stuffing and beef loin served with red currant jelly are among the treats planned at La Ferme. It's a prix pixe menu -- $38 per person; $19 for children under 12 -- served from noon to 7. Call 301/986-5255.

Melrose in the Park Hyatt will have three brunch seatings (at 11, 1 and 3) in addition to the traditional four-course dinner served from 6 to 10. Brunch ($60 per person or $63 with free-flowing Champagne) is part-buffet, part-a la carte. Dinner, excluding wine, tax and tip, is $75. The Old Ebbitt -- Beaux-Arts beauty -- keeps it simple with an a la carte menu that is considerate of non-turkey eaters. Most entrees run about $18. Dinner is served from noon to 8:30. Call 202/347-4800.

During the wintry months, few places are cozier than the Tabard Inn. A four-course Thanksgiving dinner will be served here, hearths ablaze, from 2 to 8:30. Though mostly traditional in flavor, there will be choices for vegetarians. The price is $49 per head (children dine for $20), not including wine, tax or tip. Call 202/785-1277.

Thanksgiving at the Willard Room is just as you would expect it to be -- a festival of luxe. But considering these chandeliered environs, the $78 per person tab doesn't seem too bad. Feast on fricassee of wild mushrooms, pumpkin and fois gras soup, roast turkey or salmon and a duet of pies. Bear in mind that these dollars don't include drinks.
