This recipe is good for doubling as well.


INGREDIENTS:
•  1 cup quick-cooking oats
•  1 cup sugar
•  1 teaspoon salt
•  2 tablespoons plus 1 tsp. flour
•  1 egg, beaten well
•  2 teaspoons vanilla
•  1/4 pound (1 stick) butter, melted

METHOD:
Preheat oven to 325-350 degrees.

Mix dry ingredients. Pour melted butter over them. Add beaten egg and vanilla. Mix well.

Drop by 1/2 teaspoon (may need to adjust slightly, because cookies spread during cooking) on heavy-duty aluminum foil on cookie sheet (use cookie sheet with sides if possible). Do not put more than 12 cookies on a sheet.

Bake about 12 minutes or until golden brown (watch carefully toward end as they can burn quickly).

Cool slightly, then carefully peel off; if sticking they aren't cool enough. (foil may be reused, if wiped off with a damp paper towel).
