A Killer B.L.T. (bacon, lettuce and tomato) Sandwich
Sandwiches are highly personal things. The ingredients below are my
picks for the makings of a memorable B.L.T, but that doesn’t mean
they’ll work for you. Summer is a great time to enjoy the “T” part of
this sandwich, with tomatoes at their peak.
INGREDIENTS:
3-4 slices of your favorite bacon, cooked (applewood-smoked is a
personal fave)
1 juicy vine-smelling tomato, sliced
A small handful of salad greens (optional: mix with basil and/or
arugula)
Olive oil
Coarse Salt
Bread: A soft flat loaf like ciabatta or pan cubano that will absorb the
tomato juices but not get soggy. The presence of top crusts also
eliminates the need for toasting.
Optional extras: Sharp cheese, slice of red onion, strong mustard,
mayonnaise (homemade is always better, by the way).
METHOD:
Trim each end of your loaf and slice in half length-wise. Drizzle olive
oil on each side. Sprinkle a touch of salt. Assemble your goodies.
Tomatoes first, then bacon. Next come the greens. Top things off with
your second piece of bread. Slice. Take a big bite.
