Teaism's Ginger Limeade

1/2 pound fresh ginger root, plus 1 tablespoon grated

4 tablespoons plus 2 cups fresh lime juice

2 cups sugar

11/4 cups boiling water

3 quarts cold water

Make ginger juice by peeling the 1/2 pound of ginger and cutting it into small chunks. Put in a blender or food processor and add 4 tablespoons lime juice. Process until liquefied. Strain through cheesecloth. You will need to work hard to get all the juice out. Save the juice (about 3/4 cup) and discard the stringy remains.

Put the sugar and boiling water into a gallon pitcher. Stir to completely dissolve the sugar. Add the ginger juice, 2 cups lime juice and cold water, and stir. Add the tablespoon of grated ginger. Shake or stir thoroughly before serving over ice.

Makes about 16 8-ounce servings.

Asian Iced Tea

Ice

1/2 ounce vodka

1/2 ounce gin

1/2 ounce rum

1/2 ounce tequila

1/2 ounce triple sec

2 ounces cola

2 ounces ginger-limeade concentrate (see recipe)

Lemon for garnish

Fill an 11-ounce highball glass with ice. Pour liquors over ice, top with cola and ginger-limeade concentrate. Pour into a cocktail shaker and shake vigorously until well combined and chilled. Pour back into glass, and garnish with a lemon slice or wedge.

Ginger Margarita

Ice

11/2 ounces tequila

1/3 ounce triple sec

3 ounces ginger-limeade concentrate (see recipe)

11/2 ounces water

Coarse salt (optional)

Lime wedge

Fill an 11-ounce highball glass with ice. Pour liquors over ice, and top with ginger-limeade concentrate and water. Pour into a cocktail shaker and shake vigorously until well combined and chilled. Moisten rim of glass with lime and dip in coarse salt, if desired. Pour shaker contents into glass, and garnish with lime.

Per serving without salted rim: 247 calories, 1 gm protein, 34 gm carbohydrates, trace fat, 0 mg cholesterol, trace saturated fat, 4 mg sodium, 1 gm dietary fiber

Ginger-Limeade Concentrate

3 cups sugar

2 cups boiling water

11/4 cups ginger juice (see Ginger Limeade recipe above)

3 cups lime juice

In a large bowl, pour boiling water over sugar, stirring to dissolve. Stir in ginger and lime juices. The recipe is easily halved, and leftover concentrate can be frozen for future use.

Makes 2 quarts.
