The recipe for making your own cake mix, accompanied by directions for a chocolate cake made from the mix in the Food Section last week brought dozens of requests for a yellow cake recipe. Rather than send them out in the mail, both the cake mix and a yellow cake recipe are included today. HOMEMADE CAKE MIX (14 cups mix) 9 cups flour 1/3 cup baking powder 1/4 cup sugar 1 tablespoon salt 1 teaspoon cream of tartar 2 cups shortening
Sift the dry ingredients together. Cut in the shortening with pastry blender, two knives or fingers until it resembles cornmeal. Store in covered container at room temperature.
Three cups of mix make two eight-inch layers or 2 dozen cup cakes. YELLOW CAKE 3 cups cake mix 1 1/4 cups sugar 1 cup milk 2 eggs, slightly beaten 1 teaspoon vanilla
Stir the sugar and cake mix together. Add milk, eggs and vanilla and beat for 3 minutes. Grease and flour two eight-inch cake pans and spread batter evenly in them. Bake at 375 degrees for 25 to 30 minutes. Cool in pans 10 minutes. Turn out on wire racks and finish cooling.Frost as desired.
