Here are some nutritious appeasers. They're all good providers of calcium, especially important for the child who just won't drink milk. Those with molasses are also great supplies of iron, the mineral in short supply for many women. Best of all, they're low in fat, lower in "empty calories," and fun to eat.
These nutritious sweets are easy to prepare, and are great to keep on hand when an apple or orange just won't do. FRUIT CHEWS 1/2 cup wheat germ 1/2 cup unsweetened grated coconut 2/3 cup raisins 2/3 cup chopped dried apricots 1/3 cup whole wheat flour 2 tablespoons sesame seeds 2 eggs 1/4 cup blackstrap molasses 1/4 cup honey 1/2 cup skim milk
Heat oven to 350 degrees. Grease an 8-inch-square cake pan. Mix all ingredients well and pour into pan spreading mixture evenly. Bake for 30 to 35 minutes. Cool. Refrigerate briefly and cut into squares. NUT BALLS
(Makes 6) 6 teaspoons blackstrap molasses 6 tablespoons peanut butter 2/3 cup granola
Mix molasses and peanut butter (if mixture becomes warm or runny chill before making into balls). Shape into balls and roll mixture in granola. Cover with waxed paper and put into freezer for about 3 hours. ORANGE-PINEAPPLE SHERBET
(8 servings) 1 can (20 ounces) pineapple in unsweetened juice 1 can (6 ounces) frozen orange juice concentrate, defrosted. 1 cup skim milk
Combine all ingredients in blender and mix at low speed for 10 seconds. Pour into 1 1/2- or 2-quart mold and place in freezer overnight. To unmold, dip the mold into hot water for just a second, reverse the mold onto a plate and shake gently. Garnish with fresh orange slices and fresh mint leaves. BANANA-APRICOT FREEZE 2 cups mashed bananas 1 cup mashed apricots (canned or very ripe fresh) 1 small can (3.33 ounces) evaporated milk 1 teaspoon vanilla
Combine all ingredients and mix well. Pour into an 8-inch-square pan and place in freezer for 2 or more hours. FUDGE-POP CUBES
(Makes 6) 1 cup skim milk 2 tablespoon skim milk powder 1 teaspoon blackstrap molasses 2 teaspoons honey
Mix all ingredients well and pour into individual plastic ice cube cups. Freeze (If vanilla flavor is preferred, substitute 1 teaspoon vanilla for the molasses.) GRANANAS
(Makes 3) 3 ounces granola 1 tablespoon dry skim milk powder 3 medium-size bananas 3 tablespoons blackstrap molasses
Mix together granola and skim milk powder. Roll bananas in molasses and then in granola mixture, making sure that they are evenly coated. Wrap in tin foil and refrigerate for about 2 hours.
