THE FOLLOWING menus and recipes, prepared by dietitian Jeanne Goldberg for Dr. Mayer's book, "Fats, Diet and Your Heart," are suggested for days seven and eight of a 10-day diet plan. DAY 7 Breakfast Orange juice Graham muffin with margarine Coffee with milk Lunch Cream of tomato soup Marinated chick pea salad with julienne salami strips and assorted raw vegetables Bread with margarine Fresh fruit Coffee or tea Dinner Ground beef and cornbread pie (see recipe) Spiced hot beets Cole slaw Bread with margarine Fruit cup Coffee or tea DAY 8 Breakfast Grapefruit juice Farina with milk Toast with margarine Coffee with milk Lunch Meatloaf sandwich Celery and carrot sticks Fresh fruit Coffee or tea Afternoon snack Fresh fruit Dinner Mediterranean fish stew (see recipe) Tossed salad with vinaigrette dressing Bread with margarine Sliced pears Coffee or tea GROUND BEEF AND CORNBREAD PIE (Makes 6 servings) 285 calories per serving 2 tablespoons oil 1 onion, chopped 1 green pepper, chopped 1 clove garlic, minced 1/2 pound ground beef 1 cup soy protein granules, reconstituted as directed 1 egg Salt and pepper 1/4 teaspoon thyme 1 cup yellow cornmeal 1 quart water 2 ounces American cheese, grated
Heat oil in skillet. Cook onion, pepper and garlic until tender. Drain. Combine with ground beef, soy protein, egg and seasonings.
Mix cornmeal with 1 cup cold water. Bring 3 cups water to a boil. Gradually stir in the cornmeal mixture and cook, stirring until thick. Divide in half.
Grease a square baking dish. Pat half of cornmeal mixture evenly in bottom. Add ground beef mixture and spread evenly. Top with remaining cornmeal mixture.
Sprinkle on grated cheese. Bake covered at 350 degrees about 50 minutes. MEDITERRANEAN FISH STEW (Makes 4 servings) 360 calories per serving 2 medium onion, minced 1/4 cup oil 2 cloves garlic, minced 1 can (15 ounces) tomatoes, drained 1 1/2 quarts water 1 quart clam juice 1 bay leaf 1 tablespoon dried parsley 1 teaspoon basil Salt and pepper 3 cups potatoes, sliced 1 pound white fish fillets
Cook onions and garlic in oil until tender. Add tomatoes and cook over moderately high heat 4 to 5 minutes. Add water, clam juice and seasonings and simmer 20 minutes. Add potatoes and cook until done. Add fish fillets and simmer until fish flakes easily, about 8 to 10 minutes.
