The following menus and recipes, prepared by dietitian Jeanne Goldberg for Dr. Mayer's book, "Fats, Diet and Your Heart," are suggested for days nine and 10 of a 10-day diet plan. Day 9 Breakfast Grapefruit juice Hard cooked egg Corn muffin with margarine Coffee with milk Lunch Cream of pea soup Plain yogurt with vegetable sticks Bread with margarine Fresh fruit Coffee or tea Afternoon Snack Fresh fruit Dinner Baked Kibbee (See recipe) Rice Pilaf Spinach Marinated cucumber salad Bread with margarine Baked apple Coffee or tea Evening Snack Peanut butter on crackers Milk Day 10 Breakfast Orange juice Cottage cheese Toast with margarine Coffee with milk Lunch Tomato bouillon Toasted cheese sandwich Carrot and celerty sticks Small fresh pear Tea Afternoon Snack Fresh fruit Dinner Haddock fillets in white wine (See recipe) Mashed potato Asparagus spears Tossed salad with Russian dressing Apple crisp Tear or coffee Evening Snack Bluebery muffin Tea or coffee BAKED KIBBEE (6 servings) (395 calories per serving) 1 1/2 cups bulgur wheat 2 onions, chopped fine 2 tablespoons oil or margarine 1 pound ground lamb 1 teaspoon salt 1/2teaspoon peper 1/4 teaspoon cinnamon 1/8 teaspoon ground allspice
Soak bulgur in water to cover 1 hour. Cook onions in oil or margarine until brown. Drain. Combine bulgur, lamb, onions and seasonings. Pat into 8-inch square baking dish. Bake at 350 degrees for 35 minutes. HADDOCK FILLETS IN WHITE WINE (6 servings) (125 calories per serving) 1 1/2 pounds haddock fillets 2 tablespoons flour 1 tablespoon butter or margarine 4 tablespoons chopped parsley 2 tablespoons chopped chives or green onions Salt and pepper 1/2 cup dry white wine
Grease a shallow baking dish. Spread chives and parsley in dish. Sprinkle fish fillets with flour and place in dish. Seanson with salt and pepper and dot with butter or margarine. Pour on white wine.
Bake at 400 degrees from 10 to 12 minuters or until fish flakes easily with a fork.
