As is traditional, the concessions at the Smithsonian Folklife Festival, which begins Wednesday on the Mall, are part of the cultural carnival, and this year's vendors reflect the spotlighted traditions: Haiti, Latino societies throughout the Americas and the maritime communities of the mid-Atlantic coast, from Long Island to the Outer Banks. Here's what's on the menu this year:

ANITA'S (six Northern Virginia locations) -- Puerco verde platter (green-chile-marinated pork topped with cheese); arroz con pollo platter (pulled chicken in New Mexico-style red chile sauce); red chili-cheese enchilada combo with beef, chicken or bean taco; chicharron con arroz (deep-fried pork with whole beans and rice); a la carte chicken, beef or bean tacos and chips con queso with jalapenos, $4-$9. Breakfast (served until 11): breakfast burrito (scrambled egg, potato, red chili and cheese); enchiladas rancheros (red chili-cheese enchiladas topped with scrambled eggs and chilies; and biscuits with sausage gravy and scrambled egg, $3-$5. Beverages, including lemonade and Corona, Dos Equis, Budweiser and Bud Light, $2-$5.

CHEZ YONYON (834 Chillum Rd., Hyattsville; 301-853-0404) -- Haitian-style spicy fried pork or fried fish platters; spicy Creole fried chicken platter; vegetable medley (eggplant, cabbage, spinach and carrots); and tiaka soup (turkey, corn, squash and red beans); plus a la carte fried taro, macaroni and cheese, and sweet potato pie, $2-$8. Beverages, including Corona and Heineken and passion fruit juice, $2-$5.

CHARCOAL CHICKEN/EL CARBONAZO (9623 Lost Knife Rd., Gaithersburg; 301-869-5234) -- One-half or one-quarter roast chicken platters; vegetarian platter (corn, fried yuca and salad); a la carte half-chicken; chicken sandwich; salad with corn, fried yuca or fried plantains and Peruvian milk cookies, $2-$9. Beverages, including chicha (South American fermented corn drink) and beer, $2-$5.

PHILLIPS' SEAFOOD (four area locations) -- Fried shrimp or fried fish platters; crab cake, fried fish or shrimp salad sandwiches; chicken tenders; plus a la carte vegetable-crab soup, coleslaw and french fries, $2-$12. Beverages, including iced tea and lemonade, $2.
