SHRIMP DIJON
11/2 pounds of peeled, deveined shrimp
1/4 cup butter or margarine (not diet)
1 medium onion, thinly sliced
1/4 cup flour
11/2 cups milk
2 tablespoons Dijon mustard
1/4 teaspoon nutmeg
1/2 teaspoon salt
1/8 teaspoon pepper
16-ounce package of real cream cheese, softened
Melt butter or margarine in a frying pan; add shrimp and onion and saute for 3 minutes. Do not brown. Sprinkle flour into mixture while thinning the mixture with milk a little at a time to avoid lumping. Add mustard, nutmeg, salt and pepper and cook for 3-5 minutes. Stir in cream cheese until blended; warm through but DO NOT BOIL. Serve over rice.
