1 cut-up chicken, 2 to 4 pounds

1/4 cup liquid shortening

1 stick margarine

1 cup buttermilk

11/2 cups flour

Heat oil and margarine in fry pan. Dip chicken in butter add to hot grease in fry pan. Lower heat to medium-low. Do not cover pan. Brown chicken on each side. Fry 30 minutes or until crisp.

Baking Powder Biscuits a la Reunion

2 cups flour

1 cup milk

4 tablespoons Crisco (solid)

4 teaspoons baking powder

1 teaspoon salt

In a bowl, mix together flour, baking powder and salt. Mix in shortening, add milk. Mix well until round ball of dough can be kneaded. Knead slightly and roll out to 1/4-inch thick. Cut with small cutter and place on greased baking sheet, leaving space so sides will brown. Put on middle rack of preheated 400-degree oven. Bake 10 minutes or until tops and sides are done.

Carter's Black-eyed Peas

1 quart fresh shelled black- eyed peas, washed

1 teaspoon salt

2-inch cube of fatback (salt pork)

Put all ingredients in a pot and add water to cover. Cover and cook on medium heat until peas are tender, stirring occasionally. Add more water if needed. When peas are done, drain off most of the liquid before serving. Two tablespoons of liquid shortening may be used instead of salt pork.

Nancy Carter's Corn Pone

2 cups white corn meal

1 teaspoon baking powder

1 teaspoon salt

1/2 cup buttermilk (more if needed)

1/4 cup liquid shortening Mix all ingredients to batter consistency. Pour into a greased round or square pone pan, or a layer cake pan, and bake in 425-degree oven for 20 minutes or until golden brown on top.

Pone may also be cooked in pan on top of stove and turned once. Melt 2 tablespoons shortening in pan before pouring in batter.

Aunt Kate's Blackberry Cobbler

1 quart blackberries, picked over and washed

1 cup sugar

1 cup flour

1 cup sweet milk

1 stick melted butter

In a bowl, blend the sugar, flour, sweet milk and melted butter together until smooth. Pour blended mixture in 3- or 4-inch deep pan. Heat berries slightly in a saucepan and pour into pan. Bake in 450-degree oven 30 minutes or until done.
